Queso Fundido

Queso Fundido aka Choriqueso is a delicious Mexican dish that combines chorizo and melted cheese, it's served hot, often with tortillas or tortillas chips and is perfect for sharing as an appetizer. It's a blend of spicy and creamy flavors, and best part so easy to make!

Ingredients

  1. Preheat oven to 400°F.

  2. In a bowl mix together Tillamook triple cheddar blend, Mozzarella and spicy Mexican blend cheese, and set aside.

  3. In a skillet over medium high heat melt the lard and allow it to heat up.

  4. Once hot add the onion and jalapeño, sauté for 2-3 minutes or until onion is translucent.

  5. Add chorizo and cook for 7 minutes or until chorizo is fully cooked.

    1. Tip: Once the chorizo has fully cooked, remove some of its grease.

  6. Add the chile poblano and tomato, cook for 2 minutes.

  7. Reserve 1/2 of the chorizo mixture, turn off heat, spread evenly the half of chorizo mixture in skillet, top with the blend of shredded cheese.

  8. Add the reserved chorizo mixture over cheese.

  9. Transfer to oven, bake for 5 minutes or until cheese is fully melted and bubbly.

  10. Serve with totopos (chips) or tortillas
