Cheesy White Chicken Chilli

Ingredients

  • 2 celery sticks finely diced

  • 1 yellow onion finely diced

  • 1 jalapeno finely diced

  • 1 green bell pepper finely diced

  • 2.5 tsp taco seasoning

  • 1 tsp cumin powder

  • 1 tbsp minced garlic

  • 3 cups chicken broth

  • 2 cans white beans, rinsed and drained

  • 1 tsp salt

  • 2 cups pulled chicken from a rotisserie tossed

  • 1 can diced green chilis

  • 6 oz Tillamook Cream Cheese

  • 16 oz. Tillamook Triple Cheddar Blend Shredded Cheese

  • Heat oil in a pot over medium high heat and add the jalapeños followed by the onions, celery and bell peppers. Cook until soft and add the garlic, cumin and taco seasoning.

    • Tip: Don’t have time to chop? You can skip the green peppers and jalapeños and it will still be delicious!

  • After a few minutes add one can of beans, all of the broth and bring to a simmer. Transfer one can of beans a few ladles of broth to a bowl or container and use an immersion blender to blend until smooth.

  • Pour this back in the pot and add the chicken, green chilis, corn, and cream cheese.

    • Tip: Want to make it vegetarian? Skip the chicken and use a mix of pinto and white beans.

  • Serve in bowls topped with Tillamook Triple Cheddar Blend Shredded Cheese, pico de gallo, scallions and more toppings of your choice.
